  • 2 bunches organic dinosaur/Italian kale
  • 2 lemons, juiced
  • 2 cloves garlic smashed and finely chopped
  • ½ tsp kosher salt
  • pinch red pepper flakes
  • fresh ground pepper
  • 1/3 cup grated parmesan cheese
  • 1/3 cup olive oil
  • 1/3 cup croutons (homemade are best)

 

  1. Wash, dry and cut kale into ribbons
  2. Add in 1/3 cup parmesan cheese
  3. Add in the croutons
  4. In a medium bowl, place the juice of 2 lemons, garlic, red pepper flakes, salt & pepper
  5. As you whisk the above ingredients, slowly start to add in the olive oil until it emulsifies and mixes well.
  6. Pour on top of kale and mix well

**feel free to add shrimp, salmon or chicken to top your salad.
