• 1lb mini peppers cut in half with seeds removed
  • ½ cup cheddar cheese
  • 2 chicken breasts boiled, cooled and shredded
  • ½ cup Monterey jack cheese
  • ¼ cup green onion
  • 1 medium avocado
  • salt & pepper to taste

 

 

 

  • Preheat oven to 350 degrees
  • If making with black beans, tomatoes, salsa, etc mix them together first and add salt & pepper
  • Arrange peppers in a casserole dish or baking sheet fill with the above mixture, top with chicken & cheese and put in oven
  • Bake until cheese has melted & is bubbly 5-7 min
  • Top with avocado, green onions, cilantro and Greek Yogurt in place of sour cream

 

For even more flavor, season the chicken and black bean mixture with chipotle chili powder & cumin!
