- 1lb mini peppers cut in half with seeds removed
- ½ cup cheddar cheese
- 2 chicken breasts boiled, cooled and shredded
- ½ cup Monterey jack cheese
- ¼ cup green onion
- 1 medium avocado
- salt & pepper to taste
- Preheat oven to 350 degrees
- If making with black beans, tomatoes, salsa, etc mix them together first and add salt & pepper
- Arrange peppers in a casserole dish or baking sheet fill with the above mixture, top with chicken & cheese and put in oven
- Bake until cheese has melted & is bubbly 5-7 min
- Top with avocado, green onions, cilantro and Greek Yogurt in place of sour cream
For even more flavor, season the chicken and black bean mixture with chipotle chili powder & cumin!
