- 2 bunches organic dinosaur/Italian kale
- 2 lemons, juiced
- 2 cloves garlic smashed and finely chopped
- ½ tsp kosher salt
- pinch red pepper flakes
- fresh ground pepper
- 1/3 cup grated parmesan cheese
- 1/3 cup olive oil
- 1/3 cup croutons (homemade are best)
- Wash, dry and cut kale into ribbons
- Add in 1/3 cup parmesan cheese
- Add in the croutons
- In a medium bowl, place the juice of 2 lemons, garlic, red pepper flakes, salt & pepper
- As you whisk the above ingredients, slowly start to add in the olive oil until it emulsifies and mixes well.
- Pour on top of kale and mix well
